Polish potato soup with sausage and bacon This recipe comes from my assistant chef Marcin, a talented, patient, hard-working chap. Like this recipe, he is a gem. SERVES Four to six INGREDIENTS 175g dill pickles, grated 125ml pickling brine 1 leek, finely chopped 2 stalks of celery, grated 1 large carrot, well scrubbed and grated 3 large potatoes, well scrubbed and diced 125g smoked air-cured Polish sausage, diced 75g bacon, finely chopped 1 litre water ½ bunch of fresh dill, chopped 250ml single cream Zest of 1 orange Salt and coarsely ground black pepper METHOD In a large pan, combine all the ingredients, except the dill, cream and orange zest and bring just to the boil.
